Using the Whole Chicken! Make your own broth!

 Getting the most out of healthy cooking resources is a hobby of mine, and it saves us money! Take the healthiest whole chicken you can find (this one was truly pasture-raised with regenerative, holistic practices). 

I did it rotisserie-style in the Instant Pot, finished in the broiler with a butter garlic rub, then popped the carcass and all bones into the Instant Pot again. Fill it with pure water, a bit of salt, and apple cider vinegar which draws the nutrients out of the bones! 

Put on the "Soup" setting and you can leave it overnight! In the morning, amazing bone broth to drink straight for gut healing or use to make soups or other great recipes. Just strain through a colander to catch remaining bones and pieces. Look at that beautiful broth!
